This is a healthy and delicious recipe that I have been wanting to cook for a long time and note that it is very simple but at the same time very fast to cook. It is ideal both to dip with vegetables or spikes (as a baked dough is known here in the South of Spain), as a garnish or simply to spread on toast. It is also ideal for children who have trouble eating legumes. I'll tell you that the same thing happened to me when I was a child, but when my mother cooked a stew, she set aside the chickpeas and crushed them with a fork, so I liked them a lot. Simply that this basic recipe has chickpeas with the incorporation of a spice such as cumin and several other ingredients, as you will see! And for after an intense workout both at home and away. If you want to enjoy a different Hummus, you will only have to add another ingredient, such as avocado, so you will get an Avocado Hummus. Recipe for 4 people. Ingredients: 500 grs. Chickpeas 100 grs. Chickpea Water 100 grs. Extra Virgin Olive Oil Salt 1 Lemon Juice 5 grs. Cumin 3 Cloves Garlic Elaboration:
  • STEP 1: First of all, hydrate the chickpeas the night before, that is, unless they are soaked in water for 12 hours. The water should double in volume as the chickpea will absorb some of it. Although for this recipe it is 500 grams, if you want to double hydrate, that is, 1 kg of Chickpeas and so the rest you can freeze for the next time both to cook this recipe, and to cook a stew. That's why in the cover photo, you see the frozen chickpeas. Pour 1 liter of water into a pot and add the chickpeas.

  • STEP 2: Put the pressure cooker over high heat (you can use another pot but note that it will take longer) and when it starts to boil and releases the impurities through the white foam, remove it. Then cover and cook for about 30 minutes. Remove from the heat, strain and reserve part of the water, since this will be used as part of the hummus ingredients.

  • STEP 3: Add the chickpeas to a food processor together with the other ingredients, that is, the chickpea water, the EVOO or Extra Virgin Olive Oil, the cumin, the salt and the garlic cloves without the germ.

  • STEP 4: Crush all the ingredients and arrange in several containers. If you think it is too much, just leave a container in the fridge or refrigerator and the other container, you can freeze it and in this way you will avoid food waste, since there is neither Body B nor Planet B.
