First of all say that it was spectacular since the combination of chickpeas and vegetables with raisins, had an incredible salty and sweet flavor. It makes my mouth water! This delicious and healthy recipe is for everyone, including vegans and celiacs. Cooked chickpeas (for you) 50 grs. Raisins 1 small onion 2 cloves of garlic 50 grs. Italian green pepper 50 grs. Red pepper 50 grs. Zucchini 3 Mushrooms Oregano Salt EVOO (Extra Virgin Olive Oil) Elaboration:
STEP 1: Peel the garlic and onion. Cut julienne or very finely. Then cut the mushrooms into quarters and then cut the zucchini and peppers into mirepoix or small square cuts.
STEP 2: In the previous photograph I do not show you the garlic, nor the onion since it was cooking. To cook it, first add EVOO or Extra Virgin Olive Oil and put on high heat. Then add the garlic and when it is golden, add the onion. Then add the peppers and zucchini. Let cook for a few minutes, add the mushrooms and salt. If necessary, add EVOO again. Then add the chickpeas and cook for a few more minutes.
STEP 3: Finally add the raisins and leave for a couple of minutes. Remove from the heat, place on the plate and add oregano to taste. Healthy recipe for 1 person.
